Since October, my house has smelled like pumpkin, cinnamon, and peppermint. Today, it smells like homemade chili. My husband likes to maintain a keto friendly lifestyle so he wanted me to cook a Keto Chili recipe that he found on Delish.com. I changed it a little to better suit out tastes but it is still a keto friendly chili recipe that he enjoyed and I loved it too. Here's how I made our version.
Keto Chili Recipe
I browned 2.5 pounds of ground beef in a skillet.
In a separate stock pot, add chopped yellow onion, one green bell pepper, and 4 stalks of celery. Saute until soft.
When the onion, bell pepper, and celery are soft and sauteed to taste, add the ground beef and remaining ingredients (see below). You can finish the recipe in a stock pot on your stove top, but I chose to finish in my slow cooker.
After adding all remaining ingredients (see below) to my slow cooker, I simmered on high for two hours. Top with shredded cheddar cheese and sour cream.
Oh my! It tasted so good!

Here's what you need:
6 Slices of Bacon (I prefer the Oscar Mayer fully cooked bacon. So much easier and much less mesy.)
1/2 Yellow Onion, chopped
4 Celery Stalks, chopped
1 Green Bell Pepper, chopped
2 TBSP Garlic Powder
2.5 Pounds Ground Beef
2 TBSP Chili Powder
2 TBSP Ground Cumin
2 TBSP Oregano
2 TBSP Paprika
Salt to taste (I like to use sea salt.)
Black Pepper to taste
2 Cups Beef Broth
Garnish With:
Shredded Cheddar Cheese to taste
Sour Cream to taste
Instructions:
Cook bacon according to instructions and set aside.
In a large pot, saute chopped onion, bell pepper, and celery until soft.
In a separate pan, brown ground beef.
Add ground beef and bacon to the pot containing the sauteed onion, celery, and bell pepper.
Add all remaining ingredients to the large pot.
Cook for 15 more minutes or add all ingredients to a slow cooker and simmer on low for 2 hours.
